Southwestern Sweet Potatoes


With the advent of the holiday season upon us, I will focus a majority of my recipes this week on festive and health holiday dishes. Most of them will be a bit traditional with twist. I like to do things differently when it comes to food. I like to make sure my readers don’t get bored with maintaining a healthy diet.

With that in mind, I am enclosing a recipe below for Southwest Sweet Potatoes. Think of traditional mashed sweet potatoes with a regional, seasonal twist. Sweet Potatoes contain large amounts of beta-carotene, vitamin A, vitamin B6 and vitamin C, thiamine, niacin, potassium and copper. They are also a good source of  fiber, protein, calcium, vitamin E.

Ingredients

3 pounds sweet potatoes, peeled and cubed

1 1/4 teaspoons chipotle powder

1 garlic clove (minced finely)

1 large lime, juiced

Directions

1. Steam sweet potato cubes until soft and mashable. Then transfer to a large bowl.

2. In a small saucepan, whisk in the chipotle powder, garlic and lime juice.

3. Pour the mixture into the bowl with the sweet potato cubes, and mash it all with a potato masher until smooth.
